Cruciferous vegetables contain high concentrations of glucosinolates, which are hydrolysed to isothiocyanates (ITCs) by the endogenous enzyme myrosinase when the plant tissues are cooked or chewed. ITCs are potent inducers of Nrf2-ARE driven phase II enzymes which are involved in detoxifying potential carcinogens. Other bioactivities of ITCs include the induction of cell cycle arrest, apoptosis and autophagy. Dr Bao’s Research Team focuses on the bioactivity of ITCs and the molecular mechanisms of interactions between ITCs and nutrients in the prevention of cancer and neurodegenerative diseases.
